Protein Blueberry Pancakes

Ingredients

Ingredients for 5 pancakes:

  • 50g High Protein Blueberry
  • 50g wholemeal spelt flour
  • 1/2 tbsp ground flaxseed
  • 1 tsp baking powder
  • 3 tbsp soy yogurt
  • 150ml sparkling water
  • 1 handful (approx. 70g) blueberries (fresh or frozen)
  • 100g (soy) curd for serving

Schritt 1

  • In a large mixing bowl, combine the High Protein Blueberry, whole-wheat spelt flour, ground flaxseed, and baking powder. Mix thoroughly to ensure the ingredients are evenly distributed.
  • In a separate bowl, mix together soy yogurt and sparkling water.
  • Add the yogurt and sparkling water mixture to the dry ingredients and stir briefly (!) until a smooth batter forms. Don't overmix to keep the pancakes fluffy.

Schritt 2

  • Carefully fold 2 tablespoons of the blueberries into the batter. Set the remaining blueberries aside for the topping.
  • Preheat a nonstick pan or crepe iron over medium heat.
  • Pour a small amount of batter into the pan and cook for about 2 minutes per side, until the pancakes are golden brown. Repeat this process until all the batter is used up.

Schritt 3

  • In a small bowl, mix soy curd with High Protein Blueberry and the remaining blueberries.
  • Divide the pancakes among plates and serve with the blueberry-quark mixture and other toppings of your choice.
