Ingredients
- 160g wholemeal flour
- 60g Vanilla Protein
- 2 tsp baking powder
- 1 pinch of salt
- 2 ripe bananas
- 120g liquid coconut oil
- 300 ml milk
- 2 eggs
- 1 tsp vanilla extract
- 3-4 tablespoons honey
- 1 medium ripe banana optional

preparation
- Put the dry ingredients in a bowl and mix well
- Mash the bananas. Add the banana puree, liquid coconut oil, milk, eggs, vanilla extract, and a little honey to the dry ingredients, stirring constantly, until a smooth, but not too runny, batter forms.
- Fill the finished batter evenly into the muffin cups
- Optionally, slice a medium-ripe banana and place one slice on each muffin
- Bake the muffins in the oven for about 20-25 minutes at 180 degrees
- Use the skewer test to check if the muffins are baked through. If batter still sticks to the skewer, they need to stay in the oven a little longer.
