Ingredients

  • 50g Easy Peach
  • 75g spelt flour
  • 1 pinch of salt
  • 1 tsp baking powder
  • 40g coconut blossom sugar
  • 60ml plant drink
  • 1 tbsp apple cider vinegar
  • 60g apple puree
  • 40ml rapeseed oil
  • 3 peaches

Schritt 1

  • Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit) and prepare 6 muffin cups by greasing them or lining them with paper baking cups.
  • Pit the peaches and cut them into small cubes.
  • In a bowl, mix the Easy Peach, spelt flour, salt, baking powder and coconut blossom sugar.

Schritt 2

  • In a separate bowl, mix the plant-based drink, apple cider vinegar, apple puree, and rapeseed oil.
  • Pour the wet ingredients over the dry ingredients and stir briefly until just combined. Be careful not to overmix the batter to maintain a smooth consistency.
  • Carefully fold the diced peaches into the batter.

Schritt 3

  • Divide the batter evenly into the prepared muffin cups.
  • Bake the muffins for about 25 minutes or until golden brown and a toothpick inserted comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
