Ingredients

  • 100g Bananabread
  • 300g Dinkelmehl
  • 150g gemahlene Nüsse
  • 1 Päckchen Backpulver
  • 150g Apfelmark
  • 125ml Pflanzendrink
  • 1 EL Apfelessig
  • 3 vollreife Bananen

Step 1

  • Preheat the oven to 200 degrees Celsius (top/bottom heat) and prepare a small loaf pan by lining it with baking paper or greasing it.
  • In a large bowl, mix Brekky Banana Bread, spelt flour, ground nuts and baking powder.

Step 2

  • Mash the ripe bananas with a fork in a separate bowl until they have a smooth consistency.
  • Add the apple puree, plant-based drink, and apple cider vinegar to the bananas and mix well.
  • Add the ingredients to the dry ingredients in the large bowl.
  • Briefly stir all ingredients until just combined. Be careful not to overmix the dough to avoid a tough loaf.

Step 3

  • Pour the batter into the prepared loaf pan and smooth the surface.

Note: You can add additional nuts, seeds, dried fruit, or chocolate chips to the banana bread if you like.

  • Bake the banana bread in the preheated oven for about 50 minutes or until a toothpick inserted into the center comes out clean (skewer test).
  • Let the banana bread cool slightly before removing it from the pan and letting it cool completely on a wire rack.
