Banana Bread Crêpes

Ingredients

  • 50g wholemeal spelt flour
  • 50g BREKKY Banana Bread
  • 1 tsp baking powder
  • 100ml plant milk
  • 50ml sparkling water

    Ingredients for the banana curd filling:
  • 200g (soy) quark
  • 1 tbsp vanilla protein powder (optional, alternatively sweetener of your choice)
  • 1/2 banana

Step 1

  • In a bowl, mix the wholemeal spelt flour, BREKKY Banana Bread and the baking powder.
  • Add the plant milk and sparkling water to the dry ingredients and stir briefly, just until all ingredients are combined.
  • Let the dough rest for 10 minutes while you prepare the ingredients for the banana curd.

Step 2

  • In a separate bowl, mix the (soy) curd with the vanilla protein powder.
  • Cut the half banana into small pieces and add it to the quark. Mix everything well until you have a smooth filling.
  • Heat a nonstick pan or crepe iron. Once the pan is hot, pour in some batter and spread it to form a thin crepe.

Step 3

  • Bake the crêpes for about 2 minutes per side, until golden brown. Repeat this process until all the batter is used up.
  • Spread each crêpe with the banana curd filling and then fold or roll it up.
  • Top with additional banana slices, quark, cocoa nibs and peanut butter and serve.
  • Enjoy!
